Take 1 cup of sweet potato cubes (cooked and peeled), 1 cup of coconut (unsweetened and shredded), 1 onion chopped finely, 1 cup cooked quinoa, 1 tablespoon of Raisins or cranberries, half cup of cashew nuts, 1 tablespoon of pepper powder, half spoon of Cayenne, one bay leaf and salt to taste.
In a pan heat oil and fry onions and bay leaves until golden. Then add pepper, cayenne, sweet potato and coconut to the above mixture. After frying for a while add raisins, cashew nuts and fry for another 5 minutes. Now mix the above mixture with quinoa and leave it under medium flame for 3 minutes. You are ready to serve.
Moong Dal ki Khichdi
This recipe too can be easily prepared with all the ingredients and is astonishingly light. This is a comfort food for many eastern and northern India. You will need a cup of brown rice, half cup of split green gram, 2 table spoon of ghee, 1 table spoon of cumin seeds , a pinch of Asafoetida and a tablespoon of Coriander powder and 2 table spoon of salt. Soak the rice and dal for half an hour in water and add them to a pan with some ghee after adding the above ingredients. bring it to a boil by adding 2 and half cups of water (covered). And let it cook under simmer for 10 minutes and you are ready to taste.
